So, I'm 8 days into my gluten-free experiment, and haven't found it to be too much of a struggle as of yet. Luckily I am surrounded by tons of great products to discover. Such as falafel chips, which proved a great gluten-free alternative to tortillas for last night's supper.
Derek's regular answer to what to make for dinner is chicken fajitas. He bought some Tres Marias whole wheat tortillas the other day, and then clued in that I couldn't eat them. Getting home later than I had hoped yesterday, I was starving and in a hurry to make something easy. So, I cooked up the chicken and peppers, divided it in half and only added the fajita mix (containing sugar and gluten) to his half. On mine, I just put some chili powder and hot paprika. I pulled out the homemade salsa, Hotchkiss Spinach and Arugula, the rest of the Daiya Pepperjack shreds, and the falafel chips. So, he got fajitas (which you can see in the back of the photo) and I got a delicious fajita chicken salad, with falafel chips on top to satisfy my "crunch" craving.
Being honest with myself, there's a fat chance I'm going to cook separate meals for each of us for very long, but it's nice to know that with a little bit of creativity we can eat similar meals at least. Of course he had to buy the best tortillas in town to sit in my kitchen and tempt me!
